PROGRAM:

CATHY BARRON introduced Dr. Betty Bugusu, Managing Director of the International Center in the Food Science Department. She is focused on food security and economic growth in developing countries and the title of her program today is "Towards a Well Fed World". The definition of Food Security is "The reliable availability of a sufficient quantity and quality of nutritious food for a population." Food Insecurity is living in hunger or fear of hunger. The global hunger index is measured in calories. Under nutrition is either chronic (long term lack of food) or sporadic (caused by income fluctuation and food prices). There are one billion hungry people right now (1/6th of the world population) with the highest number in Asia. Poverty and hunger are two sides of the same coin resulting in children who are stunted and lack cognitive abilities, low productivity, low life expectancy, civil unrest and national security issues. Hunger is everywhere; there are no simple solutions; and all of us have a role to play toward a fell fed world.

THOUGHTS FOR THE WEEK:

Serious one:
"Be thankful for what you have; you'll end up having more. If you concentrate on what you don't have, you will never, ever have enough."
Oprah Winfrey

Lighter one:
"May your stuffing be tasty, may your Turkey be plump
May your potatoes 'n gravy have nary a lump.
May your yams be delicious, may your pies take a prize,
May your Thanksgiving dinner stay off of your thighs."
